The first symphonic work to use the theremin was Andrei Pashchenko's Symphonic Mystery in 1924.   I'd love to hear that played.

For a recent and interesting orchestral work with theremin, try the Theremin Concerto by the Finn Kalevi Aho on the BIS label.
